Hello everybody!  I am the gourmet sister, today we will make fried stuffed eggplant sandwich together. Let's make the filling first. This is 300 grams of ground pork. We need to finely chop the green onions and put them in a bowl. Ginger is also chopped into pieces, and we put the chopped ginger into the bowl. According to your own taste, add a little salt, a little sugar for freshness, a little five-spice powder, about a tablespoon of soy sauce, a tablespoon of oyster sauce, a tablespoon of avocado oil, and an egg. Stir them evenly in one direction, and finally add half a tablespoon of sweet potato starch, continue to stir, adding a little starch will make the pork taste more tender, next we will make the batter.
Add a cup of flour, a cup of sweet potato starch, a pinch of salt, a pinch of five-spice powder, sichuan pepper powder, and a tablespoon of baking powder, and stir them well. The baking powder is added to make the fried skin more fluffy and crispy. One more egg is added, and we use beer to make the batter, because the fried skin made with water is easy to harden. Beer is rich in foam, which is carbon dioxide, and when fried, it will form cavities on the surface of the outer skin to achieve a crispy effect. Add the beer slowly, rubbing it with your hands. Make sure there are no grains and dry flour, when you grab the batter with your hands and the batter will run down like a smooth stream. Finally, add a tablespoon and a half of cooking oil to make the crust more crispy.
After washing our hands, let's prepare the eggplant. I prepared two eggplants and cut off both ends of the eggplants. Then don't cut off the first cut. Cut off at the second cut and cut it into the shape of a clip, each slice should be half a finger thick, so that the meat filling can be sandwiched inside. I cut up the rest of these. Okay, the eggplants are cut, let's pack the stuffing. Put some filling in it. Flatten it out and give it a final pinch to make it even more flat. Roll a little starch on it and seal the mouth, which is good for sticking, and the meat filling will not fall off when frying. We all know that once the meat filling falls off, the oil is easy to splash everywhere, and the fried color is not good-looking and will turn black. If the meat filling sticks out while filling, you can gently scrape it off with a spoon. Roll in starch to seal it up, I'll pack the last few, and we're ready to fry the eggplant box. This is the last one, we have the meat filling in the right ratio to the eggplant box, and we used them all up. Here I would like to tell you that while some people would like to peel off the eggplant skin, please don't do it. Eggplant skin is rich in vitamin B group and vitamin C. We must not waste it, just clean the eggplant. All right, this is our packed eggplant box.
Pour cooking oil into the pan. We can turn on a high flame to heat the oil. Take a chopstick to test the oil temperature. If the oil bubbles up along the chopsticks at this time, it means that the oil temperature is about 150c and it is ready to fry. Change to low heat, stick eggplant boxes with batter, and put them in one by one. After putting it in, don't move it until you see that the surface is basically solidified, and then flip it gently with chopsticks. If you turn it too early, the batter will fall off easily. During this period, we will use a slotted spoon to remove the batter that falls off. Fry until golden brown on both sides, about five to six minutes before removing the eggplant box. Put oil-absorbing paper on the plate, and try to control the oil when scooping, so that it will not be too greasy. I will fry the rest of these.

洗干净手以后,我们再来准备茄子。我准备了两个茄子,把茄子的两头切掉。然后第一刀不要切断。第二刀切断,切成像一个夹子的形状,每片有半指厚吧,这样可以把肉馅儿夹在里面。我把剩余的这些切完。好,茄子切完了,我们来装馅。......。如果在装的时候,肉馅儿露在外边,...... ,有的人喜欢把茄子的皮削掉,千万不要,茄子皮含有丰富的维生素B群和维生素C,我们千万不要把营养浪费了,只要把茄子清洗干净就好了,这是我们装好的茄盒。
锅中倒入食用油。我们可以开大火把油加热。拿一根筷子试一下油温,...... 炸到两面呈金黄色,大约五到六分钟就可以把茄盒捞出来了。盘子中放上吸油纸,捞的时候尽量把油控掉,这样吃起来就不会太油腻了。我把剩下的这些炸完。
