Hello everyone, I'm gourmet sister, and today I'm going to make dumplings with celery and beer sausage. I just asked my husband to pick up some celery in the backyard. Let's come out and have a look. Now this season, the backyard is full of life. My husband is pulling celery. The celery grown by ourselves is fragrant, tender, and full of flavor. It is especially delicious to make dumplings. These should be enough. Let's wash the celery. After washing the celery, we will remove the leaves of the celery. The dumplings made with the leaves will taste bitter. I will take the leaves off and fry eggs with them for breakfast, which is nutritious and delicious. The celery is ready, I also cleaned the green onions and ginger and set them aside.

Next, we are going to knead the dough. I used two cups of flour and one cup of warm water. The water should be added slowly, giving the flour enough time to absorb the water, so that the dough will be pliable. No matter how much dumpling dough you make, the ratio of flour to water should be 2:1. OK, the dough is ready, the surface is very smooth, and it feels good. I covered it and kept it aside for it to rest. This is 300 grams of celery, 100 grams of green onions, and 50 grams of ginger that I have prepared. Let's deal with them next. Cut the onion vertically first. Then chop them into small pieces. Put the chopped green onions into a plate. Ginger should also be minced. Put the ginger on the plate too. Celery is also cut into small pieces. Chop it with a knife, well, the size is almost the same, and put them on the plate. We put the prepared vegetables aside for now.

I bought this sausage made with beer, you can choose different varieties according to your own taste. Open the package. I pinch the meat out of the sausage. Then add the prepared green onion and ginger. Add two tablespoons of cooking oil. Two tablespoons of soy sauce, adding soy sauce is to add some sauce aroma, we do not need to add salt, because the sausage has been added enough salt already, and we know that all sausages are salty, so my friends, if you like light taste, you need to add more veggies to balance out the flavors. The prepared celery is added. It is easier to make dumplings with sausage, just add a little oil, soy sauce, and vegetables. Stir them in one direction, and our dumpling filling is ready.

OK, let's start making dumplings, take out the dough, and knead it a little. Cut it into two pieces with a knife, and cover the unused part to prevent the skin from drying out. We roll this piece into a long strip. Cut it into evenly sized pieces with a knife. Sprinkle lightly with dry flour to avoid sticking and flatten each dose. Use a rolling pin to roll them into small round cakes that are thin on the outside and thick on the inside, so that they won't break easily when filling. Well, put some stuffing in the center of the skin, squeeze it with both hands like this, a dumpling is ready. I'll show one more. Put a lot of water in the pot, turn on the heat, after the water boils, gently put the dumplings into the pot, immediately use the back of the spoon to gently stir the water in the pot along the edge of the pot, do not stir the dumplings, Cover the pot and continue stirring when the water boils. We should never walk away while cooking dumplings, so as not to overflow the dumpling water. In the last minute, we will open the lid and cook the stuffing inside. As the saying goes, cook the skin with the lid on, and cook the stuffing with the lid off. It takes a total of five minutes to cook a pot of dumplings.
