A:
银耳/白木耳/雪耳 snow fungus 55g
蜜枣 honey dates 2颗/pcs
水 water 3-3.5L

B：
带核红枣 red dates with seed 45g
雪梨 pears 2颗/pcs
冰糖/蔗糖/石蜂糖 适量 rock sugar to taste

1-A。银耳用热水川烫3秒，起锅。
Bring a pot of water to a boil. Then, parboil the snow fungus for 3 seconds, remove it from the hot water.

*川烫-把银耳的杂质烫掉，让银耳更容易出胶
Parboil - to soften the snow fungus and to make the soup more sticky and thicker

*不可烫太久，否则营养会流失
Do not over cooked, otherwise the nutrition will be lost

2。银耳 + 干净、凉的过滤水，白色部份朝下，放入冰箱，浸泡6个小时或隔夜。
Soak the snow fungus with clean water, keep in the fridge for 6 hours or overnight.

*用凉水浸泡能让银耳更容易出胶。相反的如果用热水浸泡，银耳不但很难煮出胶，营养也会流失。
Avoid to soak the snow fungus with hot water, otherwise the nutrition will be lost

3。第二天用流动水洗2遍，挤干水份。
Clean the snow fungus on the next day.

4。把黄褐色部份减掉丢弃。
Cut off the bottom yellow part.

5。白色部份剪碎。剪得越碎、银耳和水的面积接触越大、出胶就越多、汤也会更浓稠。
Shredded the top white color part, as small as possible.

6。银耳 + 蜜枣冷水下锅。
Place the snow fungus + honey dates + room temperature water into a pot.

*一定要冷水下锅，银耳才更容易被煮出胶
Use room temperature water to make the snow fungus more softer

*喜欢较浓稠的，3L的水就够了
*喜欢较多汤且不太浓稠的，可以加至3.5L的水
Add 3L of water to get thicker soup
Add 3.5L of water to get watery soup

7。大火煮滚后转小火，炖30分钟。
Bring the water to a boil, turn to low heat and simmer for 30 minutes.

*水要一次性加足，中途不能加水。
Do Not add water into the pot while simmering

8-B。红枣洗净，对半切开
Cut the red dates into half.

9。在下锅之前才把雪梨去皮、去籽，切小块
Remove the skin & the core of the pears. Cut into bite-sized.

10。银耳糖水炖了30分钟后开盖，把红枣 + 雪梨 + 冰糖/蔗糖/石蜂糖倒入。
Pour the red dates + pears + rock sugar into the pot after 30 minutes.

11。开大火煮至滚后再转小火，继续炖10分钟
Bring the soup to a boil again over high heat.
Then reduce to low heat and simmer for another 10 minutes.

12。10分钟后，让汤锅留在炉台上，保温最少30分种才食用。
Leave the pot on the stove and keep warm for at least 30 minutes before serving.

*保温得越久，汤会越浓稠。可以的话，冷藏至隔天再喝会更好喝。
The longer you keep warming, the thicker the soup will become.

13。喝不完的可放入冰箱冷藏。冷藏可保存 1-2 个星期。
Pour into the airtight bottles and keep in the refrigerator.
It should last for 1-2 weeks in the refrigerator.
