*This recipe makes about 20 pieces of Roti Canai

A:
中筋面粉 Plain flour 1kg
盐 Salt 1.5茶匙/tsp
细砂糖 Sugar 2汤匙/tbsp
*you may substitute 2tbsp of condensed milk for the sugar

B:
植物油 Cooking oil 3汤匙/tbsp
水 water 560ml+-

C:
植物油 Cooking oil 30g

D:
室温软化有盐奶油 Soften butter
鸡蛋 Eggs
植物油 Cooking oil for cooking

1-A。面粉 + 盐 + 砂糖混合均匀。
Combine flour + salt + sugar.

2-B。倒入油搅拌一下。
Add cooking oil and mix.

3。一点一点的倒入水,揉至柔软、稍微粘手的软面团。
Add water a little by little , knead dough until soft and smooth.

4。把面包机盖盖着/或把面团放入刷了油的大碗里,盖着保鲜纸,让面团静置30分钟。
Let the dough to rest in the bread maker for 30 minutes OR transfer it into a bowl, cover with cling wrap, then rest for 30 minutes.

5。桌面和手掌上抹一些油,把面团平均分割成20颗圆面团。
Turn the dough out onto a oiled surface. Shape the dough into 20 balls.

6-C。在每颗圆面团上抹一层植物油,然后放入大碗里 (不要上下重叠)
Gently rub each dough with oil. Rest in a bowl alongside but not on top of one another.

7。剩余的油倒入大碗里的圆面团上。
Pour the remaining oil onto the dough.

8。盖着保鲜膜,室温静置4个小时。
Cover the top with clip wrap. Rest at room temperature for 4 hours.

**如果是隔天才要吃的,可放入冰箱冷藏静置至第二天,室温解冻30分钟后再进行下个步骤
To eat paratha on the next day, you can refrigerate the dough overnight. Let it sit on room temperature on the next day, for 30 minutes, then proceed to the next step.

9。当天要食用:4个小时后,在桌面和面团上抹一些植物油。
To eat on the same day: Place one dough ball onto the oiled table.

10。把小面团压扁,慢慢的把面团推成薄面皮
*面皮推得越薄,做出来的Paratha会越脆。
Press down with the palm of your hand, flatten the dough. Pull and stretch the dough until paper-thin and almost translucent.

11-D。在面皮上刷一些已软化奶油。
Smear soften butter evenly.

12。方法一👉🏻方形煎饼 (1)Square shape paratha:

上下往内折,左右也往内折,最后成一个正方形面皮。
Fold one-third of the way in on either side of the circle, so you have three layers of paratha on top of each other.
Fold this elongated shape into thirds again, so you end up with a squarish-shaped paratha.

13。让面团静置10分钟。
Rest for 10 minutes.

14。方法二👉🏻旋螺煎饼 (2)Spiral shape paratha:

在步骤11-D之后,用前后折叠方式,把面皮折成长条形。
After the Step 11-D, fold dough into a rope.

15。完成后双手各握着面条两端,把面条拉长
Holding both ends, pull and stretch the dough.

16。从前端卷向后端。
Holding down one end, create a spiral with the dough.

17。后端的收尾处,收在面团下方。
Tucking the other end into the center.

18。静置10分钟。
Rest for 10 minutes.

19。方法三👉🏻蛋煎饼 (3)Roti telur:
在步骤11-D之后,倒入一颗鸡蛋,把鸡蛋打散,均匀涂抹在薄饼皮上。
After the Step 11-D, add in an egg and spread evenly on the dough sheet.

20。上下往内折,左右也往内折,最后成一个正方形面皮。
Fold one-third of the way in on either side of the circle, so you have three layers of paratha on top of each other.
Fold this elongated shape into thirds again, so you end up with a squarish-shaped paratha.

21。蛋煎饼是不需休面的,直接下油锅煎熟。
There is no necessary to rest the dough for roti telur making.

22。开始煎paratha | Paratha cooking:
预热油锅 (方形和旋螺煎饼需先轻压成薄片)
Heat up the pan with oil (Stretch out the prepared square and spiral dough by pressing with the tips of your fingers on work surface into thin layer)

**23。可以做多一些,在这个步骤之后,把每一片 paratha 各自用塑料袋包起来。
You can make more paratha dough. Wrap each piece of flat dough in a plastic bag.

**24。冷藏保存2-3天。
冷冻保存1个月左右。要吃的时候解冻、隔着袋子用手压扁一些,拿出来再下锅煎熟即可。
It should last in the refrigerator for 2-3 days.
Or in the freezer for 2-3 months.

25。把煎饼煎至双面香脆金黄色。
Fry paratha till golden brown on both sides.

26。用手掌把煮好的煎饼往内拍2下,让它更酥脆。
Fluff up paratha by whacking it with both hands coming together on a flat surface.
