**You can double the recipe if you are using 125g-140g mooncake mould.

A-蛋黄内陷层 Egg Yolk Jelly Filling:
鲜橙汁 fresh orange juice 200ml
细砂糖 sugar 80g
燕菜粉 agar-agar powder 5g

B-芝士内陷 Cream cheese Filling:
牛奶 milk 200g
砂糖 Sugar 60-80g
Agar-agar powder 8g
Jelly powder 4g
Cream Cheese 90g

C-火龙果外层 Exterior Dragonfruit Jelly:
火龙果 dragonfruit 200g
水 Water 250g
砂糖 Sugar 50-70g
Agar-agar powder 8g
Jelly powder 4g

1-A:准备一大盆冰水。
Get a bowl of ice water and set aside.

2。橙汁 + 砂糖 + 燕菜粉倒入锅里,大火边煮边搅拌至大滚后即可离火。
Combine orange juice + sugar + agar-agar powder in a pot. Stirring constantly and bring to the boil over high heat. Remove from heat.

3。把整个锅放入冰水中,搅拌至稍微冷却了,倒入14格蛋黄模中。
Warm the pot of orange liquid in the ice water.
Pour the orange liquid in the egg yolk mould.

4。放入冰箱冷藏30分钟,或至成形即可脱模。 蛋黄切成2/3备用。
Refrigerate the “egg yolks jelly” for 30 minutes or until the jelly set completely.
Unmold the jelly and cut into 2/3.

*使用 125g-140g 的月饼模的话,燕菜蛋黄不需切成2/3份。
There is no necessary to cut the egg yolk jelly if you are using 125g-140g mooncake mould.

5-B:牛奶 + 糖 + agar-agar powder + jelly powder 倒入锅中,大火边煮边搅拌至大滚后即可离火。
Combine milk + sugar + agar-agar powder + jelly powder in a pot. Stirring constantly and bring to the boil over high heat. Remove from heat.

6。把cream cheese倒入牛奶浆中,搅拌至cream cheese溶化,过滤。
Combine cream cheese + milk mixture, mix until cream cheese has dissolves.
Strain the cream cheese mixture.

7。准备10个蛋糕纸杯 (杯口直径=5cm, 杯底直径=3.5cm, 高=3cm)
Get ready 10 x cupcake cups (top diameter=5 cm, bottom diameter=3.5cm, height=3cm).

8。把1茶匙芝士馅倒入纸杯,静置30秒。
放入一颗燕菜蛋黄,再倒入芝士馅直到总重量至35g。
Pour 1 tsp of cheese mixture into a cupcake cup, leave it to set a little for 30 seconds.
Place one “egg yolk jelly” on the cheese mixture.
Fill the cupcake cup with cheese mixture until the total weight reach 35g each.

**Exterior mooncake : Filling = 1 : 1
**Examples:
70g mooncake mould 👉🏻 35g : 35g
125g mooncake mould 👉🏻 62.5g : 62.5g

9。放入冰箱冷藏30分钟,或至成型后,脱模
Refrigerate for 30 minutes or until the jelly set completely. Unmold the jelly.

10-C。火龙果压成泥备用。
Purée the dragon fruits and set aside.

11。水 + 糖 + agar-agar powder + jelly powder 倒入锅中,大火边煮边搅拌至大滚后即可离火。
Combine water + sugar + agar-agar powder + jelly powder in a pot. Stirring constantly and bring to the boil over high heat. Remove from heat.

12。火龙果泥 + 糖浆混合均匀。
Combine the dragon fruits purée + sugar mixture.

组合 To make the mooncake:
13。把1汤匙火龙果浆倒入月饼模里,静置30秒
Pour 1 tbsp of dragon fruit mixture into the mooncake mould, leave it to set a little for 30 seconds.

14。放入蛋黄馅,再倒入火龙果浆至满。
Place a piece of “egg yolk filling” on the dragon fruit mixture. Then top up with dragon fruit mixture.

15。室温静置10分钟后,放入冰箱冷藏最少1个小时即可食用。
Refrigerate for at least 1 hour before serving.
