Chicken Katsudon Recipe (チキンカツ丼)

In this week’s easy Chicken Katsudon Recipe (チキンカツ丼), I’m going to share my secrets for making a delicious chicken cutlet rice bowl with chicken katsu nestled in a bed of sweet onions and creamy egg. Katsudon is a beloved Japanese comfort food staple and it’s a great way to use up leftover Tonkatsu, Gyukatsu, or Chicken Katsu.

INGREDIENTS (makes 1 large serving)

1 piece Chicken Katsu (https://youtu.be/3Te1MTJd1e4)
2 large eggs
70 grams onion (~1/2 small onion)
1/3 cup dashi (https://youtu.be/92tSuuKkOis)
2 tablespoons sake
1 1/2 tablespoons soy sauce
2 teaspoons sugar
1 serving cooked short-grain rice
Mitsuba or scallions for garnish
