How To Make Octoberfest German Sausage & Potato Soup/Stew - Recipe

This hearty autumn soup is so thick, it could easily become stew.

INGREDIENTS

2 tbsp olive oil
1 onion, roughly chopped
6 bratwurst, in 1/2” (12mm) rounds
1/4 head cabbage, roughly chopped
10-12 mushrooms, thickly sliced (1/2” - 12mm)
1/4 cup flour
1/2 tsp pepper
1/2 tsp salt
1/2 cup beer
3 cups chicken stock
1 lb (450g) potatoes, small bite size
DIRECTIONS

1. In deep pot, cook onion in olive oil over medium heat for 5-6 minutes, stirring occasionally.
2. Add bratwurst, cabbage, mushrooms, flour, pepper, and salt. Cook over medium heat, stirring occasionally, for 8-10 minutes.
3. Add beer and deglaze pot.
4. Add chicken stock and potatoes. Simmer, uncovered, stirring occasionally, for 20-25 minutes.
