Easy Mincemeat Flapjacks #christmas #recipe #shorts
These lovely classic flapjacks come with a Christmassy twist of spice and fruit and are a great way to use up half a jar of leftover mincemeat.
130 g butter
130 g soft light brown sugar (see notes)
75 g (6 tbsp) golden syrup
20 g (2 tbsp) black treacle
140 g mincemeat
260 g oats
1 - Put the butter, sugar, syrup and treacle into a large microwavable bowl or saucepan.
2 - Microwave on half power for 30 second bursts until the butter melts
3 - Add the mincemeat and stir in.
4 - Add the oats and fold them in so that they are well coated in thebutter/syrup mix. You may find it easier to do this in two stages, mixing in half the oats and then adding the rest.
5 - Transfer to a lined 8” /20 cm tin. Spread out to the corners and edges and press down well.
Bake at 170°C (Fan) / 375°F /Gas 5 for about 25 minutes until golden (check after 20).
6 - When ready, the edges will be a deeper golden, there will be some bubbling and the flapjacks will have risen a little.
7 - Allow to cool completely and firm up before removing from the pan and cutting into squares.
