Agar Jelly Fruit Cake | Agar Fruit Jelly Cake

Learn how to make this delicious Agar-agar jelly fruit cake with 3 layers.

What is Agar-agar?
Agar-agar is a plant based substitute of gelatin.

Ingredients:
Fruit Layer (first layer)
1) Water 1 and 1/3 cups
2) Lychee juice 2/3 cup
3) Agar-agar powder 1 and 3/4 tsp
4) Sugar 1/4 cup
5) Fruit mixed small pieces (Mango, Strawberry, Kiwi, Lychee, and Blueberries) total 2 cups (ratio is up to you)

Coconut Milk Layer (second layer)
1) Coconut milk 2/3 cup
2) Water 1/4 cup
3) Agar agar powder 1 tsp
4) Sugar 3 tbsp

Juice (any fruit juice) Layer (bottom layer):
1) Mango juice 3/4 cup (The pulp was very thick for me, so I added enough water to make it usable. If the pulp has a good consistency, then use 1 cup juice, without water.)
2) Water 1/4 cup
3) Agar agar powder 1 tsp
4) Sugar 1 tbsp if needed

Instructions:
Fruit Layer
1. Add water, lychee juice, agar agar powder, and mix well.

2. Turn on the heat and boil until agar agar powder dissolves, stir constantly.

3. Add sugar and stir until dissolves

5. Pour this liquid into the mold about 1/4 inch, and add fruit pieces evenly, pour rest of the liquid slowly.

6. Let this layer sit for 5 minutes or until the top is firm enough to pour on the second layer.
Coconut Milk Layer:
1. Add coconut milk, water, agar agar powder, and mix well.

2. Turn on the heat and bring to a boil, stir constantly.

3. Add sugar and stir to dissolves.

4. Pour gently this coconut layer.

5. Let it sit for 5 minutes or until firm.

Juice Layer:
1) Add juice, water and agar agar powder, mix well.

2) Turn on the heat and bring to boil, stir constantly.

3) Turn off the heat add sugar, stir well. Do not overcook this mixture.

4) Pour this juice layer gently.

5) Refrigerate for 2 to 4 hours or until cold.
