Mango Cheesecake | No Bake Mango Cheesecake

Ingredients and instructions down below.

Ingredients:

Base Layer:
1) Sponge Cake 8 inches wide

Mighty Mango Filling:
1. Water 1/2 cup
2. Mighty mango juice 1 cup
3. Agar agar powder 2 tsp
4. Mango puree 1/4 cup
5. Sugar 2 tbsp
Mango Cream Cheese Layer:
1) Cream Cheese 16 oz
2) Sugar (1/4 cup + 2 tbsp )
3) Heavy Whipping Cream 1 cup
4) Whole milk 1 cup
5) Agar Agar powder 2.5 tbsp
6) Mango puree 1/2 cup
7) Mango chunks 1/2 cup

Mango Jello Layer (Top):
1) Water 1 cup
2) Agar agar powder 2.5 tsp
3) Sugar 1/3 cup
4) Mango puree 1.5 cup
5) Lemon juice 1 tbsp
6) Mango chunks 1/2 cup

Instructions:
Base Layer:
1. Add 8 inch Sponge cake to the cake ring.

Mighty Mango Filling :
1. Add 1/2 cup water and 1 cup mighty mango juice to a saucepan.
3. Add 2 tsp agar agar powder and mix well.
4. Turn on heat and cook until agar agar dissolves.
5. Add 1/4 cup mango puree and mix well.
6. Add 2 tbsp sugar and mix well.
7. Let it cool down.
8. Pour to 6 inch cake mold.
9. Pop any air bubbles with a skewer if needed.
10. Refrigerate until set.

Mango Cream Cheese Layer:
1. Beat 16 oz cream cheese (room temperature) until it turns smooth.
2. Add (1/4 cup + 2 tbsp) of sugar and beat well.
3. Add 1 cup heavy whipping cream in a separate bowl and whisk until it forms stiff peak. (Refrigerate)
4. Add 1 cup room temperature whole milk onto saucepan.
5. Add 2.5 tbsp agar agar powder and mix well.
6. Make sure to boil the mixture until all of the agar dissolves completely.
7. Add 1/2 cup mango puree to agar agar and mix well, only then you should set it aside and let it cool for only a short while.
8. Add slightly cooled agar mixture to the cream cheese mixture and beat until well mixed.
9. Now fold whipped cream into the cream cheese mixture gently.
10. Pour 1/3 mango cream cheese filling evenly over the cake base.
11. Now add Mighty Mango Filling and fresh mango chunks on the side.
12. Pour remaining mango cream cheese mixture.
13. Refrigerate for 1-2 hours or until set.

Mango Jello Top Layer :
1. Add 1 cup water to a saucepan.
2. Add 2.5 tsp agar agar powder and mix well.
3. Cook on medium - low heat until agar agar dissolves.
4. Add 1/3 cup sugar and cook until sugar dissolves.
5. Add 1.5 cup mango puree and mix well.
6. Add 1 tbsp lime juice.
7. Let it cool.
8. Pour 1/3 mango jello mixture over cheesecake layer and add mango chunks.
9. Add remaining mango jello.
10. Pop any air bubbles with a skewer if needed.
11. Refrigerate the cake overnight
