[氣炸鍋玩烘焙]03.台灣古早味起司蛋糕 Castella Cheese Cake wit Airfryer

這顆蛋糕已是減糖減油的配方
使用的是6.5寸圓形蛋糕模&燙麵法

😊材料有
起司片2片

蛋黃糊:葵花油40g、低筋麵粉60g、牛奶40g、蛋黃78g(約4顆)、香草精0.5g
蛋白霜:冷藏蛋白140g(約4顆)、糖35g、鹽1g、玉米粉5g

🙂氣炸烤程~
預熱:160度10分鐘
160度3分鐘-取出畫線,蓋上鋁箔紙。
160度15分鐘+150度25分鐘,取出拿掉鋁箔紙。
140度3分鐘+120度3分鐘,把蛋糕烤乾跟上色。
⚠️最後上色的階段,請不時的拖出來看,適時調整成你要的溫度跟顏色。

出爐不用倒扣,兩手抓著烘焙紙,把蛋糕提起直接移到架上放涼,並撕開側面的烘焙紙。

📒Q&A
1.葵花油可以用味道沒那麼重的油替代,例如:大豆油、玄米油、葡萄籽油。
2.如果沒有香草精、玉米粉,可以不加。
3.如果是6寸烤模,請把配方調整成:
蛋3個、油30g、低粉45g、牛奶30g、糖27g、鹽1g、玉米粉3.5g

*Ingredients*(6-inch round pan)
2 pcs cheese slices

Egg yolk batter :
30g vegetable oil
45g cake flour
30g milk
3 egg yolks (total 58g)
1g vanilla extract

Meringue:
3 egg whites (total 115g)
27g castor sugar
3.5g corn starch
1g salt

*Step*
Separate the egg whites from the egg yolks.
The egg whites are packed in oil-free and water-free steel basin.refrigerated.
Put in the refrigerator for later use.

Make egg yolk batter.
The vegetable oil is heated until there is a oil pattern, and then the fire is turned off.
Sift the cake flour through the sieve and mix well.
Add the milk and mix well.
Add the egg yolks three times and mix well.
Add the vanilla extract and mix well.
Than cover with a damp cloth or later use.

Make meringue.
Remove the refrigerated egg whites.
Whip until large bubbles rise, then add sugar three times.
Whip until small bubbles rise at low speed to dissolve sugar.
The last time add sugar, also add corn scratch and salt.
The meringue is firm but not too stiff.

Mix the egg yolk batter to loosen.
Scrape down the side of the meringue, then mix part of the meringue into the egg yolk mixture.
Add the egg yolk batter mixture into the rest of the meringue and fold in gently.

Work as smoothly as possible.
Mix gently with a hand whisk, and at the end, make sure to scrape well with the spatula.

Put into the mold.
Put 2/3 of batter, and then put cheese slices and the rest of the batter, remove air bubbles

*Air Fryer Bake*
Warm up:
160°C for 10 minutes
Bake:
160°C for 3 minutes-take out the line and cover with aluminum foil.
160°C for 15 minutes+150°C for 25 minutes- remove the aluminum foil.
140°C for 3 minutes+120°C for 3 minutes-bake the cake and color.
⚠️ The last stage of coloring, please drag it out from time to time to adjust it to the temperature and color you want in time.

Take it straight of the mold and remove the baking paper on the side.
You can enjoy it. Cold and warm are delicious.
