How do you make lotus paste for traditional mooncake filling? Lotus paste is commonly used as filling for mooncakes, pastries and dessert in Chinese and Japanese Cuisine. It is made from dried lotus seeds and the process is similar to that used to make other bean paste.

150g dried lotus seeds
800ml water
110g granulated sugar
75g cooking oil (80ml)
15g glutinous rice flour + 3 Tbsp of water
¼ tsp salt
