WHAT I EAT IN A DAY | FALL MEAL PREP

A delicious day of Fall food, including a comforting, easy breakfast and lunch for work, and one of my favorite meals to make when entertaining guests for dinner.

Chia seed pudding recipe:

- 2 cups milk of choice
- 1/4 cup of chia seeds
- 1 dash of vanilla extract
- 1 tbsp cocoa powder
- 2 tbsp maple syrup

Mix ingredients together and refrigerate overnight.

Butternut squash + Carrot Soup:

- ½ butternut squash
- 1 giant carrot or 3 normal carrots
- 1 onion
- herbs & spices of choice
- ¼ cup cream
- 1 cup of broth

Roast ½ butternut squash and carrot in a 450 degree oven for 40 minutes. Fry up onion and spices. Add squash, carrots and broth and cover veggies with water. Let simmer for 15 min. Blend and add cream.

Creamy Mushroom Pasta (I doubled this in the video)

- 2-3 cups chopped mushrooms
- 400g fresh pasta (I make mine with the Phillips Pasta Maker, and use 3 eggs instead of water: http://go.magik.ly/ml/6w3u/)
- juice and zest of 1 lemon
- 1 cup cream
- ¼ cup chopped pancetta
- ½ onion and 2 cloves garlic
- 1 cup white wine
- optional: drizzle of truffle oil.

On low heat, sauté pancetta and herbs – then remove. Sauté onion and garlic. Add mushrooms and sauté until they start to become golden brown. Add cream and white wine and bring to a gentle simmer, then add lemon juice and zest. Cook pasta until 1 minute undercooked, and reserve 1 cup pasta water) combine sauce with pasta and add pasta water until the sauce coats the pasta generously, and add truffle oil if using. Serve and top with crispy pancetta and sage.

Butternut squash salad: toss pecans, ½ chopped butternut squash, 1 pack arugula, 1 cup of coat cheese with dressing (equal parts balsamic, olive oil and mustard). Soak red onion, thinly sliced, in salty water and drain. Add to salad.
