50% Poolish At 70% Hydration

Still learning the art of making Poolish pizza dough. Here I try to recreate the previous method of autolysing the poolish pizza dough to get that nice puffy crust that we all like. This time things didn’t go as expected with the autolyse method, some emergency folding saved the day and produced some stunning pizzas.

Once again the pizza crust was big, light and fluffy. I’m really taking to the Poolish way of making pizza dough, it’s not difficult to make and the end result is a pizza that will blow you away.
