Homemade Stovetop Mac'n'Cheese vs. Kraft | Homemade Junk Food with the Husband
Can I recreate Kraft Mac'n'Cheese for less money, better flavor, and not much more time or effort?
Here's my recipe for homemade stovetop mac'n'cheese. The method is actually not that different from the boxed kind.
Serves 2 (1065 cal for total recipe)
Cook according to the package instructions:
1 1/4 cups macaroni (or any short pasta of your choice)
While the macaroni is cooking, finely dice or grate:
2 1-inch cubes of mild cheddar cheese (about 1.2 oz, or 1/3 cup pre-grated)
Measure:
1/2 cup canned milk (*not the sweetened kind!)
Pre-cut:
2.5 TBS butter
The rest of the recipe goes EXACTLY like Kraft.
Drain the macaroni once it's done, then return the empty pot to the stove on medium-low heat. Add the butter and milk, stirring until the butter melts, then add the cheese, stirring constantly until the cheese melts and the sauce is smooth. Add the macaroni, stir to combine, season to taste with salt.
PRICE COMPARISON:

The box: $0.98
4 tbs butter: [$3.50 per 4 sticks. 1/8 = $0.44]
1/4 cup fresh milk: [$5.98 per gallon. 1/64 of that = $0.09]
TOTAL: $1.51
Time to cook, start to finish: 12 min.
MY "REDEMPTION ARC" RECIPE (less cheese, more milk and butter):
1 1/4 cup macaroni (525 cal) [$1.08 per 4 cups, so $0.27 per cup, so $0.27 + $0.07 = $0.34]
2.5 tbs butter (250 cal) [$3.50 per 4 sticks. 1/16 + 1/64 = $0.34]
1/2 cup canned milk (160 cal) [$0.89 for total can. 1/4 of the can = $0.22]
2 cubic inches of mild cheddar cheese (130 cal) (it's about 1/3 cup shredded, or 1.2 oz) [$0.43/oz, so $0.51]
A little salt (basically free)
TOTAL: $1.41
Time to cook, start to finish: 13 min.
HOMEMADE (first pass):

2 tbs butter (200 cal) [$3.50 per 4 sticks. 1/16 = $0.22]

4 cubic inches of cheese (275 cal) (it's about 2/3 cup shredded, or 2.4 oz) [$0.43/oz, so $1.03]
A little salt (basically free)
