Here are some quick easy FOOD SWAPS to swap out all those ingredients that give you (and us) sleepless nights!!

MAIDA IN WHITE SAUCE- most people only think of Maida or corn flour to thicken sauces but you can also use ARROWROOT FLOUR (Chef CHINU’s fave), RICE FLOUR & MAKHANA FLOUR

GLUTEN IN BREADCRUMBS- make this easy peasy seed crust- 2 tsp pumpkin seeds + 2 tsp sunflower seeds + 1 tsp flax seeds + 1/4 cup almond meal + 1 tbsp Parmesan/ nutritional yeast. It’s YUM!

DAIRY- COCONUT MILK or ALMOND MILK or CHICKEN STOCK/ BONE BROTH (let it be noted though that Chef Chinu thinks that if you source good quality, local dairy, there is NOTHING wrong with giving it to your kids 🙄)

REFINED SUGAR- so many alternatives! DATE SYRUP, JAGGERY (only in winters!), COCONUT SUGAR, HONEY, MAPLE SYRUP.
