-INGREDIENTS-
1700 g beef, boneless blade steak cut (I’ve used Certified Angus)
1 medium yellow onion
1 bay leaf
4-5 peppercorns
2 generous pinches of salt
2 liters of water
1 kg small to medium size potatoes, peeled and halved
2 large red bell peppers, deseeded and cut in wedges
5-6 sweet vine tomatoes, peeled
8-10 sprigs of fresh cilantro, finely minced (for garnishing)
