-INGREDIENTS-
4 Beef short ribs, excessive fat carved out
1 head garlic
4 fresh thyme sprigs
1 tbsp. olive oil
Salt and pepper to season the meat
¼ cup tomato sauce
1 ½ cup red wine (or to cover the meat to one third)
2 cups beef or chicken stock

Slow cook the meat covered with a lid or sealed with foil in the oven at 340F/170C for 1 ½ hour.

Make your favorite way of mashed potatoes for the side.

For the salad:
4 red radishes, julienned
1 head of romaine lettuce, chopped

For the dressing:
2 tsp. lemon juice, freshly squeezed
2 tsp. olive oil
2 tsp. maple syrup/honey
½ tsp. poppy seeds.
A pinch or two salt
