SPICY CAULIFLOWER BITES WITH SWEET CHILLI MAYO

My mum is now officially an addict of these ... she literally drops me off cauliflowers randomly and asks me to make her a batch. She evens eats them cold haha!

Ingredients 
- 1 x head of cauliflower
- 50g rice flour (or gram flour, or plain flour if you don't have either rice or gram)
- 50g cornflour
- 1 x tsp chilli paste or chilli powder
- 1 x tsp garlic powder
- 1 x tsp onion powder
- 1 x tsp paprika 
- 1/4 x tsp salt
- 1/4 x tsp white pepper 
- sparkling water

Sweet Chilli Mayo
- 80g mayo
- 20g sweet chilli sauce 

Method 
1. Cut up cauliflower and par-boil until you can pierce the individual florets with a knife (approx. 7-8mins)
2. Mix together all ingredients for the batter and mix in enough water to reach the consistency of double cream
3. Fry cauliflower in hot oil (approx. 170 degrees celsius) for 3-4mins until crispy
