Cheesy Chorizo & Chicken Pasta Recipe: Family Meal Idea

CHEESY CHORIZO & CHICKEN PASTA

Bryce loved this dish so much he was literally sucking the sauce OFF of the pasta 😅 I’ll take that as a major thumbs up from the littlest family member 🥰

Ingredients
- 1/2 x chorizo
- 2 x chicken breasts
- 1/2 x pack mushrooms
- 1 x onion
- 3 x garlic cloves
- 2 x tbsp tomato purée
- 500g passata (rinse out carton)
- 150ml double cream
- 100-200g grated mozzarella
- 20g parmesan
- 300g fresh penne

Method
1. Remove skin from chorizo and grate into pan
2. Fry with chopped chicken breast until cooked and remove from pan
3. Drizzle in some oil, then toss together chopped mushroom, onion and garlic cloves and fry until softened
4. Add tomato purée and a little water and fry for 2 mins
5. Pour in passata and cook for 10/15mins on medium/high heat
6. Pour in double cream, parmesan, mozzarella cheese and cooked pasta - stir to combine & serve 😘
