Cooking an Emirates First Class meal: Red Thai Chicken Curry

We all had our fair share of recipes and cooking videos this quarantine. I resisted trying any simply because I’ve had my fair share of cooking disasters throughout my life 😀.

But then last week I received a very generous box of groceries from Foodcraft UAE, the online food store of Emirates Flight Catering. The box came filled with pastries, fresh vegetables and several types of meat and even ice cream! They seemed to have guessed I was missing my first class lounge meals and plane food!!!

Along with the goods, there was a letter from their head chef Jeremy Steele challenging me to “cook up a storm”. I had to try it but didn’t know where to start!

I texted a good friend of mine - Draga Susa, who happens to be of the most talented chefs at the Emirates First Class lounge at Terminal 3 in Dubai - and he agreed to help.
So we got on a zoom call and decided to cook some Thai food to celebrate my fun memories skywardsfreaking in Bangkok. A vegetable soup as a starter and a Red Thai Chicken Curry as main course. It was so simple and easy with the fresh and readily chopped vegetables as well as the ready made gravy! Even a freak like me could do it! 😀

The ingredients from Foodcraft which we used were:

For the soup:
Mix vegetables for soup

For the Red Thai Chicken Curry:
Chicken whole leg cubes
Stir fry vegetables
Red thai curry sauce
