Ingredients 材料:
【A】
6 Egg whites (蛋白6粒)
90g Caster sugar (幼糖)
【B】
250g Cream cheese (乳酪)
60g Butter (牛油)
50g Caster sugar (幼糖)
80g UHT dairy Whipping Cream (动物性鲜奶油)
80g Fresh Milk (鲜奶)
6 egg yolks (蛋黄)
60g Plain flour (面粉)
30g Corn flour (sifted) (粟米粉) (过筛)
1 tbsp lemon juice (1大匙柠檬汁)
1. Double boil ingredients (B), whisk till it is smooth and set it aside.
2. Use medium speed to beat ingredients (A) till soft peaks are formed. Fold lightly into No.1 mixture, mix till well combined and pour into the 9" mould.
3. Bake in water bath at 150C for 90 minutes or until the centre is set and golden brown.
