50% BIGA at 70% Hydration

Here we make pizza dough based on the pre fermentation process called BIGA. The total process took 32 hours. The BIGA was 24 hours at room temp then the full ingredients took an extra 8 hours. I used caputo Manitoba for the BIGA and caputo nuvola for the remaining ingredients. The result was really nice, a lovely crust which was very crispy on the outside and super light and fluffy on the inside. The was a nice taste to the dough which could be gown to the 9 grams of fresh yeast that was used.
