MULTIGRAIN BREAD - Bonita's Kitchen

Welcome to Bonita's Kitchen! Today we will be making MULTIGRAIN BREAD, this is a lovely recipe and so easy to make. Recipe posted below!
I'm using 5 x 9 inch bread pans, but you can use any size.

( Please wash hands before and after working with dough )

Ingredients:
3 Cups, warm water, more if needed
7 1/2 cups, 100% multigrain flour or 1/2 100%multigrain and 1/2 100% whole wheat
( leaving 1/2 cup or flour for working dough during mixing stage)
1 tbsp, yeast, fast rising or traditional
1/3 cup, honey, or 2 tbsp sugar
1/4 cup, melted butter, margarine or oil, extra tbsp for hand, pans and bread tops
1 tsp, multigrain
1 tsp, sesame seeds
1 tsp, flex seeds
1 tsp, pumpkin or sunflower seeds
1 to 1/2 tsp, sea salt
Extra butter for pans to spread on top of bread and hands for forming dough.

Method:
- In a small bowl, add yeast, warm water, honey or sugar and stir together let set for 5 minutes or until formed.
- In a large bowl add multigrain flour, 1/2 tsp sesame seeds, 1/2 tsp flex seeds, 1/2 tsp pumpkin or sunflower seeds and sea salt, adding 7 cups of flour leaving 1/2 cup flour for working dough.
( leaving the remainder of seeds for over top of dough in pans final stage. ) use all 100% multigrain or 1/2 multigrain and 1/2 whole wheat.
- Start to mix using a wooden spoon or kitchen aid, add room temp or melted butter, yeast mixture with honey and water, kneading dough with hand and spoon.
(This is the ONLY stage you can add more warm water if needed, or continue mixing and folding dough inward.)
- Continue mixing the 1/2 cup of flour until dough forms a dough ball and all flour is away from side of mixing bowl, kneading for 10 minutes to activate the yeast and form the dough ball.. 
- After forming a ball of dough, cut an opening into top of dough, mark the sign of a cross on the top of dough. ( Optional ) Cover with lid and towel. If you don't have a lid cover with parchment paper and a big towel or blanket. Keep in a warm place in the kitchen this will make it rise faster. ( Viewers Tip: Place bowl in the oven with the LIGHT ONLY on and set the timer for 20 to 30 minutes until risen.
- After the 20 to 30 minute are up, remove towel and lid then knead your dough again, cut another mark in to top of dough, cover and wrap with a towel and place in that warm place again.
- After 20 to 30 minutes is up, " DON'T DEFLATE DOUGH BEFORE CUTTING INTO SMALL DOUGH BALLS " put a little butter or oil on your hands and shape into small balls x 3 for one loaf bread or one long piece of dough. Oil loaf pans adding dough to each one, brush top with butter and add extra seeds of choice. Cover pans with parchment paper and big towel and put pans in a warm place to let rise until double about 20 to 30 minutes.
- Once dough has risen, pre-heat oven to 350ºF. Put dough in oven and set timer for 30 minutes or depending on your oven.
- Check bread to see if it is baked, once bread is baked, remove from oven and removing from pans unto a cooling rack, add a little butter to the top carefully and cover for 5 minutes to soften top of bread.
- Spread butter all over warm loaves, cover and let cold to room temperature before bagging. If you bag the bread before cooling it will buildup moisture in bags.

Serve with butter, jam or molasses over warm bread, only keep one loaf out at one time freeze the other two loaves in a freezer bag for another time.

 IF YOU WISH TO USE ALL 100% WHOLE WHEAT BREAD THIS IS THE INGREDIENTS YOU WILL NEED AND FOLLOW THE METHOD TO HOW TO MAKE IT ABOVE

INGREDIENTS IF YOU USE ALL 100% WHOLE WHEAT FLOUR

7 CUPS 100% WHOLE WHEAT FLOUR, add 6 1/2 to the bowl keeping 1/2 cup to mix to form a dough ball.
2 TBSP MULTIGRAINS 
2 TBSP FLEX SEEDS
2 Tsp sunflower seeds or pumpkin seeds
2 Tsp sesame seeds
1/4 Cup cracked rye 
1 Tsp sea salt
1/4 Cup butter, margarine or oil
3 Cups warm water, more if needed
1 Tbsp Yeast, fast rising or traditional
1/3 Cup Honey or 2 tbsp sugar
You can use seeds or grains of choice for extra.
Follow top method to work dough, and enjoy.
