Here's what you need to make this easy vegan recipe, which is loaded with veggies and full of flavour...
- 2 sweet potatoes
- olive oil
- 1 onion, sliced
- 2 garlic cloves, chopped
- 1 teaspoon ground cumin
- 1 teaspoon dried coriander
- 1 teaspoon paprika
- 1⁄2 teaspoon mustard seeds
- pinch of chilli flakes
- 1 × 400g tin of coconut milk
- 1 × 400g tin of tomatoes
- 1 tablespoon apple cider vinegar
- 1 tablespoon maple syrup
- 1 courgette (zucchini)
- 1 × 400g tin of chickpeas,
- About 100g baby spinach
- salt and pepper
