How to make RICH CHOCOLATE LAVA CAKE

A special dessert for chocolate lovers and valentines
Rich Chocolate Lava Cake

Preheat oven to 425F/220C
Bake for 10 - 13mins depending on your oven and ramekin size

113g (1/2 cup) unsalted butter
184g (1 1/2 cup) dark chocolate
3 egg yolks
2 whole eggs
51g (1/4 cup) caster sugar
14g (1 Tbsp) brown sugar
2g (1/2 tsp) salt
18g (2 Tbsp) all purpose flour

3 large ramekins
Butter and flour for greasing

Garnish with:
Raspberries or favourite fruit
Powder sugar for dusting

Steps

1 - on the stove or in a microwave melt until smooth the butter and chocolate -remove from heat and allow it to slightly cool

2 - “ Very Important” In a separate bowl or food processor froth the eggs and sugar ingredients.

3 - fold in the egg mixture to the chocolate

4 - once incorporated add in the flour and salt

5 - ensure ramekins are well greased with butter then the flour

6 - divide the lava cake batter between the three ramekins

7 - place on baking sheet bake for 10-13 mins (depending on you oven and ramekin size)
The lava cake should be set on the outside but still undercooked on the inside.

8 - while cooling for 1 minute run a knife along the edge of the ramekin Note: the lava cake will continue to cook if you let it rest

9 - invert on plate and remove ramekin ( tapping on the bottom with a spoon can assist in the release if needed)

10 - garnish and dust with powdered sugar

11 - serve and enjoy hot!
