STUFFED MUSHROOMS RECIPE
• 2 lbs. White Mushrooms, wiped clean and stems removed
• 4 oz. Shiitake Mushrooms, sliced
• 4 oz. Baby Bella Mushrooms, sliced
• 4 oz. Oyster Mushrooms, sliced
• 3 Tbsp. Breadcrumbs
• 1 Tsp. Salt
• 1 Tsp. Black Pepper
• ½ cup grated Parmesan Cheese, plus 1 Tbsp.
• ½ cup grated Pecorino Romano Cheese
• ¼ cup of “parsley, garlic, olive oil mixture” from Skirt Steak Roll-Up

DIRECTIONS:
• To wash the white mushrooms, wipe clean with damp paper towel
• Snap off the stems of the white mushrooms, and using a melon baller scoop out the inside of the mushrooms
• Place the scooped out white mushrooms in a baking dish
• In a bowl, combine the stems of the white mushrooms and all of the various sliced mushrooms (Shiitake, Baby Bella and Oyster)
• Using a hand blender, gently puree the mushrooms to form a paste
• In a sauté pan on medium heat, add the parsley, garlic and olive oil mixture and bring to a sizzle
• Add mushroom paste, ½ tsp. salt and ½ tsp. black pepper and mix well
• Turn off stove
• Mix in ½ cup Parmesan cheese and ½ cup Pecorino Romano cheese
• Slowly stir in 3 Tbsp. breadcrumbs continuing to mix well
• Let stand for 10 minutes
• Using a spoon fill each mushroom with the mixture
• Sprinkle with 1 Tbsp. of grated Parmesan cheese
• Bake in 400 degree oven for 20-25 minutes
