Mac and Cheese Carbonara Recipe
Serves: 1 Person
INGREDIENTS
Cavatelli Pasta 4 oz.
Pancetta 2 Tbsp
Heavy Cream 4 fl oz.
Smoked Mozzarella or Fontina 2 oz.
Parmasan 2oz.
Peas 1 tbsp
Breadcrumbs 1 tbsp
Egg Yolk 1ea
Salt & Pepper TT
Boil the pasta and reserve. Crisp pancetta in saute pan and add cream, bring to boil and reduce by a third, add the pasta, peas and cheeses (save 1oz of parm for topping) stirring to incorporate, when all melted, turn off fire and add the egg, mix and check seasoning, pour into dish. Top with the remaining parmesan and crumbs, place in 375 oven until bubbly toasted and delicious looking!
