ZUCCHINI WITH SPAGHETTI RECIPE

♣ 8 Zucchini, peeled and cut into 1” cubes
♣ 3 Tbsp. Extra Virgin Olive Oil
♣ 5 cloves Garlic, crushed
♣ 1 lb. Spaghetti
♣ 1 Tsp. Salt
♣ 1 Tsp. Black Pepper
♣ Grated Parmesan Cheese, optional

DIRECTIONS:
• In a sauté pan on medium heat, pour 3 Tbsp. extra virgin olive oil
• Stir in 5 cloves of crushed garlic and cook until it starts to brown. *do not let burn
• Add the cubed zucchini and continue stirring with the garlic
• Cover and cook for a couple of minutes, add 1 Tsp. salt and 1 Tsp. black pepper. Adding the salt to the zucchini will release its juices
• Add pasta to a pot of salted boiling water
• Boil 8-10 minutes
• Drain the water from pasta
• Add the pasta to zucchini mixture and stir
• Add grated cheese (optional)
