Hokkaido Milk Bread, fine texture, soft taste, full of milk flavor

Hokkaido Milk Bread with 100% sponge and dough method

Ingredients: (2 loafs, tin size 196x110x106mm)

Sponge
Ingredients A:
500g bread flour
15g caster sugar
9g fresh yeast (or 3g dry instant yeast)
160g milk
140g whipping cream
35g egg white
10g butter

Dough
Ingredients B:
40g egg white
30g caster sugar
6g salt
6g fresh yeast (or 3g dry instant yeast)

Ingredient C:
10g butter

Preheat the oven to 180C/355F
Bottom rack of the oven, upper and lower heat at 180C, bake for 30-35 minutes
Cover with alu foil when the bread turns golden brown
