COFFEE BUTTER CREAM TART (Agnes Bernauer Tart)

Today I show a traditional bavarian cake recipe. The preparation is not so difficult but takes some time because you have to bake four flan cases. Anyhow the delicious result justifies the effort. ;)

Recipe:

Japanese (egg white) pastry:
- 8 egg white
- 1 cup (200 g) sugar
- 1.3 cup (160 g) granulated almonds
- 1 1/2 tbsp cornstrach
- 1.2 cup (100 g) flaked almonds

Coffee butter cream:
- 4 egg yolk
- 1/2 cup (100 g) sugar
- 1/3 cup (50 g) cornstarch
- 3 tbsp instant coffee powder
- 2 cups (500 ml) milk
- 1 1/3 cup (300 g) butter
- 1/3 cup (50 g) powdered sugar
- 4 cl coffee liquer (or espresso)
Also needed:
- 2/3 cup (60 g) flaked almonds roasted
- some tbsp sunflower oil
- baking plate + baking paper,
- 10 inch (26 cm) springform pan

Baking:
- 338°F (170°C)
- leave the door ajar, so that the damp can escape
- bake each base for 30 minutes
- bake until light brown
- let cool down after baking
- bake 4 bases

Tips for preparation:
- Important: butter and coffee cream
should have nearly the same
temperature before blending
- take out some tbsp for the edge
- spread flaked almonds on the edge
- cool tart after finishing
