墨西哥辣椒炖牛肉 最简化做法 Birria Beef Easy Recipe

墨西哥辣椒炖牛肉， 非常经典的一道炖肉菜肴。制作上是先将肉用墨西哥干辣椒制作成的腌肉酱腌制后再将炖煮的做法。 而所用的墨西哥干辣椒，从最不辣的是ancho 干辣椒，一点点辣的Guajillo， 到最辣的arbol 都可以用来做这道炖牛肉。 视频中分享的是传统做法简化版， 好吃又好做， 节日期间，非常合适。

食材 Ingredients
3~5 pcs Ancho Pepper
5~7 pcs Guajllio Pepper
3pcs Tomatoes 番茄
Half Medium Size Onion 半个洋葱
3 gloves of Garlic 3 瓣 大蒜
1 tbsp Clove Powder 丁香
1 tbsp Black Pepper 黑胡椒
1 tbsp thyme百里香
1 tbsp Coriander香菜籽
1 tbsp Paprika 甜椒粉
1 tbsp Oregano 牛至粉

2.5 lbs Roast Beef
2 lbs Beef Short Ribs 牛仔骨
1 tsp Salt盐
1 tsp Brown Sugar 糖
Hot/Boiled Water沸水/热水
3 pcs Bay Leaves香叶

小贴士：
• 打辣椒酱的时候，加的水份，要合适， 第一次做，慢慢加
• 牛肉一定要选带点肥的， 超市的Beef Chuck Roast 价廉物美
• 炖之前一定要先煎哦， 这一点很重要。
