Quick question:
So what makes a pretzel into a pretzel?
The answer is brief dip in an alkaline water bath before baking.

Here is the theory behind:
* This bath essentially prevents the dough from fully “springing” during baking and giving pretzels their signature chewy crust and the unique and indelible “pretzel” flavor.
* Can be replaced by 6% Baking Soda solution. But the color will not be as good as Lye.
* Wear GLOVE when handle the Lye. Pour Lye into water not the opposite.

The making steps are super easy. The bread is addictive to eat one by one.

📝Ingredients
Bread Flour 300g
Sea Salt 4g
Milk Powder 15g
Instant Dry Yeast 3g
Ice Water 165g (55%)
Unsalted Butter 15g
Cooked Meatballs ~11pcs

4% Sodium Hydroxide Solution I used Food Grade Sodium Hydroxide: 40g +1000g water

✔️ Tips
✤ Pretzel dough belongs to lower-hydration low oil content dough. Pretzel dough has low hydration, 55% already high. You can lower to even 40%. Therefore, add butter together with other ingredients at the beginning. Add water in on batch. No need to save and adjust later as other dough. Pretzel dough only need develop 70% of it gluten。
✤ We don’t want the pretzel dough to rise too much before baking so it can have the chewy taste. So we rest the dough in the fridge.
✤ Roll the dough into slightly bigger than the meat ball so that when wrapping, the ball can stay in the center.
✤ I like salty pretzels, but you can always make it sweet.

碱水面包, 表皮特别Q弹, 有着与一般面包不一样的口感。 而且里面包裹着美味的肉丸, 咸口味, 怎么吃也不会腻! 而烘焙碱是碱水面包特殊的风味来源。 它属于强碱, 要带手套。 碱倒入水中而不是水倒入碱中。 配置的是4%碱水溶液。 你也可以用6~7%小苏打来代替。 但是上色效果没有烘焙碱好。

📝 材料
高筋面粉 300g
海盐4g
奶粉15g
即发干酵母3g
冰水165g (55%)
无盐黄油15g
熟肉丸 10个左右

✔️ 小贴士
✤ 碱水面包属于低油低水份面团所以黄油可以和别的材料 一起加入进行面团的揉制。水可以一次性加入不用预留。面团只需要打到70%的筋度即可。
✤ 滚圆的时候, 粘紧表面的面团即可,不要过分收紧面团。
✤ 碱水面包的面团入烤箱前只需要稍许发酵即可, 这样烤完才可以有那种Q弹的口感, 所以我们在冰箱冷藏松弛。
✤ 面团擀得比肉丸大一点即可。这样包裹的时候肉丸才可以保证在中心的位置。
