Penne alla vodka – a creamy tomato sauce with a spirited twist! | Ingrid's kitchen
This pasta is easy to make and it's very tasty. A creamy tomato sauce with a spirited twist! The vodka enhances the taste of the tomatoes and the chilis makes it perfectly spicy!

Recipe is for 3-4 persons.
INGRIDients:
Olive oil
2-3 shallots
2-3 cloves of garlic
0.5 teaspoon chili flakes
200 gram (7 ounces) tomato paste
0.5 deciliter (approx. 0.2 cups or 50 grams) vodka
2.5 deciliter (approx 1 cup) cream
300 gram penne pasta
100 grams grated parmesan
Fresh parsley (garnish)
1. Chop the shallots and garlic finely.
2. Grate the parmesan.
3. Chop up some fresh parsley.
4. Sauté the shallots in olive oil until soft and translucent.
5. Add the garlic and chili flakes, sauté for a minute or two.
6. Add the tomato paste.
7. Let the tomato paste cook for approximately 20 minutes.
8. Cook the pasta in the meantime. Make sure to save some pasta water!
9. When the tomato sauce breaks a little and when the fat is separating, add the vodka and let it reduce to at least half of its original volume.
10. Add the cream and stir until mixed.
11. Add most of the parmesan cheese to the sauce. Save some to use as garnish.
12. Add the cooked pasta and mix with the sauce. Add some of the pasta water.
13. Time to serve! Garnish the pasta with parsley and parmesan.
14. Enjoy!
