【妈妈食谱】| 家乡味咖喱鸡

✿材料
- 甘榜鸡 1只 (2公斤)
- 马铃薯 4粒
- 辣椒干 约12根
- 蒜米1粒
- 小葱头 8粒
- 椰浆 1碗
- 咖喱粉 3汤匙 (Babas 牌 咖喱鸡粉)
- 咖喱叶 1束
- 生抽 适量
- 盐 2汤匙

✿开锅前准备
1. 将鸡切块加入2汤匙的盐搅拌均匀,然后腌20分钟 备用
2. 将马铃薯切块,浸入盐水15分钟后沥干 备用
3. 1壶热水 备用
4. 将辣椒干剪半然后浸入热水软化,之后将种子去除后放入搅拌机打成泥 备用
5. 蒜米,小葱头切碎 备用
6. 咖喱粉加少许清水搅拌成泥 备用

✿步骤
1. 首先,加入适量的油热锅再倒入马铃薯煎至表面金黄,然后盛出
2. 加入蒜米和小葱头爆香
3. 倒入咖喱粉泥,辣椒干泥翻炒
4. 加入鸡肉翻炒还有放入咖喱叶翻炒均匀
5. 倒入热水(水量大约盖着鸡肉)
6. 放入已煮好的马铃薯煮沸
7. 盖上锅盖然后用中火焖煮大约15分钟 (期间开盖搅拌 以便均匀)
8. 15分钟后开锅盖加入生抽1汤匙,椰浆1碗煮沸
9. 最后,搅拌均匀即可

[Mum’s Recipe] | Curry Chicken

✿Ingredients
- 1 kampung chicken (2kg)
- 4 Potatoes
- 12 dried chilies
- 1 Garlic
- 8 Shallots
- 1 bowl of coconut milk
- 3 tablespoon of curry powder (Babas brand curry chicken powder)
- 1 stem of curry leaves
- 1 tablespoon of Light soy sauce
- 2 tablespoon of salt

✿Pre-preparation
1. Cut chicken in pieces, add 2 tablespoon of salt and mixed it. Leave it for 20 minutes
2. Cut into 4 pieces per potato, put into salt water for 15 minutes, and remove from water
3. Prepare 1 pot of hot water
4. Cut dried chilies into half and put into hot water, remove the seeds and blend with blender
5. Mince garlic and shallot
6. Add curry powder with water and stir it accordingly

✿Steps
1. First of all, put oil to heat the wok and then add potatoes in, fried until it has golden appearance
2. Add in garlic & shallot
3. Pour in curry powder & blended dried chillies and stir fried accordingly
4. Add in chicken, curry leaves and stir fried accordingly
5. Pour in hot water (water level just enough to cover chicken)
6. Put in cooked potatoes until it boils
7. Cover the wok and steam it for around 15 minutes
8. After 15 minutes, add 1 tablespoon of light soy sauce & 1 bowl of coconut milk
9. Final Step, stir it accordingly
