Curry Chicken With Potatoes (Chinese Style)
The recipe for Curry Chicken
this recipe doesnt need to be follow exactly but more or less the same amount of ingredients needed. if you like it spicier, add more dried chilies or chili.. if you like it more coconuty, then add more coconut milk.
Blended paste:
1/2 tbsp belancan
5-6 dried chilies
5-6 chilies
5 candlenuts
1 thumb size ginger
1 thumb size galangal
10 shallots
2 stalk lemongrass
1/2 bulb of garlic
1 tbsp curry powder / chili powder
1/2 tsp tumeric powder
1/2 tsp coriander powder
1/4 tsp cumin powder
1/4 tsp fennel powder
a little bit of water
*Blend everything into fine paste
2 stems of curry leaves
2 potato cut into pieces
2 whole chicken drumstick cut into few pcs / half a chicken
1 tsp salt
1 tbsp sugar
4 tbsp coconut milk
4 tbsp oil
Water
1. Prepare the blended ingredients and blend into paste.
2. In a pot add in oil and blended paste. Saute on medium high heat until oil secreted out from the paste / tumi until pecah minyak. It will take 10-15mins.
3. Add in curry leaves, chicken and potato. Stir to coat well.
4. Add in water just enough to cover 3/4 of the chicken in the pot.
5. Bring to boil and simmer for 30mins.
6. Season with salt and sugar.
7. Close the lid and it seat in the pot for 1hour.
8. Reheat the curry chicken to boil.
9. Add in coconut milk.
10. Stir and serve.
