Gli ingredienti

per l'impasto:
- latte: 175 ml.
- lievito secco di birra: 7 gr.
- farina 00 (11% proteine): 530 gr.
- zucchero: 100 gr.
- uovo: 1 pz. (grande)
- tuorli: 3 pz.
- sale: 5 gr.
- burro: 150 gr.
- vanillina o zucchero vanigliato
- buccia gratuggiata di un arancia

per la farcitura:
- noci tostate: 200 gr.
- mandorle tostate: 100 gr.
- nocciole tostate: 100 gr.
- zucchero a velo: 130 gr.
- uovo: 1 pz.
- albumi: 3 pz.
- liquore all'arancia: 50 gr.
- sale: 3-4 gr.
- cacao amaro in polvere: 30 gr.

per lo sciroppo:
- acqua: 175 ml.
- zucchero grezzo di canna: 130 gr.
- liquore all'arancia: 50 ml.
- zucchero vanigliato

temperatura: 165 gradi celsius per 45-50 minuti.
NB. Dopo 10 minuti coprire la superficie con della carta forno o carta stagnola per non brucciare la superficie.
NB2. Peso prodotto finito: 800 gr. + 1200 gr.

The ingredients

for the dough:
- milk: 175 ml.
- dry brewer's yeast: 7 gr.
- 00 flour (11% protein): 530 gr.
- sugar: 100 gr.
- egg: 1 pc. (great)
- yolks: 3 pcs.
- salt: 5 gr.
- butter: 150 gr.
- vanillin or vanilla sugar
- grated peel of an orange

for the filling:
- toasted walnuts: 200 gr.
- toasted almonds: 100 gr.
- toasted hazelnuts: 100 gr.
- icing sugar: 130 gr.
- egg: 1 pc.
- egg whites: 3 pcs.
- orange liqueur: 50 gr.
- salt: 3-4 gr.
- bitter cocoa powder: 30 gr.

for the syrup:
- water: 175 ml.
- raw cane sugar: 130 gr.
- orange liqueur: 50 ml.
- vanilla sugar

temperature: 165 degrees celsius for 45-50 minutes.
NB. After 10 minutes cover the surface with parchment paper or aluminum foil so as not to burn the surface.
NB2. Finished product weight: 800 gr. + 1200 gr.
