INGREDIENTS:
1 liter milk
1 1/2 cup cream
1/2 cup of sweetened and condensed milk
1/4th cup of brown sugar
handful of almonds
handful of pistachios
handful of cashews
1/4th teaspoon of saffron
This recipe is very simple and you'll also hear it in the video for almost 102 times.
Matkas are called clay pots in the south east Asian culture. This recipe is originally served in them but since I had no access to them I had to use small glass jars.
Add 1 liter milk in the pan with cream and condensed milk and bring it to a boil.
REMEMBER - You need to stir the milk mixture occasionally during this whole recipe.
Turn the heat to low and let the milk mixture simmer. Chop the almonds, cashews and pistachios and add them to the milk mixture. Add the brown sugar right after that and bring the milk mixture to another boil.
Let it boil for a couple of minutes and make sure that the milk mixture doesn't get out of the pan. Bring the heat to low and add the saffron threads in the mixture.
Simmer the milk mixture until it is reduced to half of it's volume.
After the milk mixture reduced to half you will notice the thick and creamy texture. It is time to put this mixture in small pots.
After putting the kulfi mixture in the pots we will cover them with plastic wrap and freeze them for 8 hours.
After 8 hours we will uncover the pots and sprinkle some chopped pistachios or nuts of your choice.
