देहाती मटन करी सीधे देहात से | Authentic Mutton curry straight from countryside

Friends, it's getting cold. In this way, I am presenting a country-style of mutton curry. But why not make this recipe by going to a typical village. Thinking of this, I have left on a road away from Delhi that connects the long highway with a rough road in the village. I have come to a small village in Uttar Pradesh, where at the mud house of Bhagwati Dadi, I am going to make Dehati mutton whose every bite will connect you with the fragrance of the soil of the village.

Cooking Steps:
We are preparing a traditional wood fire stove with the help of Bhagwati Dadi as she is an expert and highly experienced in this. For this recipe, we need a half kilo of onion which we have cut into slices, 2 whole garlic bulbs, 4-5 green chilies. This is 1 kilogram of goat meat. You can use lamb
as well. 100 grams of peeled garlic and 50 grams of ginger, I am grinding ginger on sil batta which is a traditional grinding stone. Let's grind garlic cloves as well with ginger. Ginger garlic paste is ready. Take it out in a bowl. Chulha is ready, let's place a lagan on it which is traditional copper cookware. Add a half cup of mustard oil and heat up till it releases smoke. Add 2-3 bay leaves, 1 tablespoon of coriander seeds, 2-inch long cinnamon stick, 2-3 black cardamoms, 8-10 peppercorns, 6-7 pieces of cloves, 2-3 green cardamoms, Fry for half a minute, add onion slices. Fry until golden color. Add ground ginger garlic, add 4-5 pieces of whole red chilies, Add
green chilies, Add 2 pieces of garlic bulbs. Mix well and cook for 4-5 minutes. Add a teaspoon of turmeric powder, Red chili as per taste, 2 tablespoons of coriander powder, 1 teaspoon of garam masala powder, 1 teaspoon of cumin powder, add salt as per taste, mix well and cook for 2-3 minutes, add mutton pieces. Mix well and cook for 5 minutes. Cover the lid and cook for 10 minutes, Keep on stirring in 3 minutes interval. if spices stick at the bottom, add a little water. and stir well. Add a large-sized tomato which is roughly chopped. Mix well. Cover the lid and cook for 5 minutes. Masala is cooked and the mutton looking little darker. Add one liter of water. Mix well. I am adding half-liter more water as I am cooking on chulha and the fire is a little high so it will evaporate in cooking. Cook it until it boils, Cover the lid and cook for approx one hour until meat tenderizes. Its been an hour, our desi style mutton is cooked. Let it rest for at least half an hour. Dehati mutton is ready to relish with your favorite bread. Serve hot. Garnish it with coriander leaves. Bhagwati Dadi is also enjoying Dehati Mutton Curry.
