OK PEOPLE. So this video. It’s SOMETHIN DIFFERENT. If you’ve ever asked yourself: What if Harry Styles’ “Watermelon Sugar” and Olivia Rodrigo’s “Deja Vu” were vegan Desserts? - Well, then this video has the answer to your very specific question! This week I took my recipe inspiration from popular song lyrics, turning them into tasty treats: The result was a Golden Champagne Cake with Cream Cheese Frosting, Vegan Honey Pie, Watermelon Berry Cakes and Homemade Coconut Strawberry Ice Cream. INGREDIENTS

#1 Watermelon Sugar Cake(s)

1 small to medium sized watermelon
200ml vegan whipped cream (¾ cup + 2 tbsp)
a pinch of salt
1 tsp vanilla
1-2 tbsp maple syrup
green and yellow food coloring, start with a few drops each, then adjust to your liking
strawberries to put on top
golden baking glitter

#1.5 Watermelon Sugar Drink

~1 cup watermelon, without seeds (~150g)
juice of 1 lime
¾ cup frozen strawberries (120g)
a handful of ice cubes
optional: additional sweetener to taste, liquor of choice to taste

→ serves 1-2


#2 Vegan Honeypie

for the pie crust:
300g all purpose flour (2 ½ cups)
½ tsp salt
50g sugar (¼ cup)

200g COLD vegan butter, cut into cubes (7,05oz)
1 tsp vanilla
1-3 tsp water, start with 1 see if you need more

flour for the surface

for the filling:

40g + 1 tsp cornstarch (= ⅓ cup + 1 tsp) PLUS 60ml water or non dairy milk (¼ cup)
180ml non dairy milk or non dairy cream (3/4 cup)
60g coconut sugar or raw brown sugar (⅓ cup)
3 tbsp vegan honey (or date syrup, maple syrup)
¼ tsp salt
1 tsp vanilla

for the letters:

50g vegan butter at room temperature (1/3 stick + 1 tsp)
175g powdered sugar (2 ½ cups minus 1 tbsp), added to the whipped butter in 2-3 batches
optional: a generous pinch of salt, a few vanilla aroma droplets
food coloring

while kneading the play-doh adjust the consistency by adding more powdered sugar or water (if needed)

! cut them out on top of a piece of parchment paper, let them sit there to harden fully !

→ yields enough for 1 8 or 9 inch cake tin (20-23cm)
→ any leftover dough you can use to make sugar cookies out of, simply shape them into whatever shape you prefer, lay them all out on a baking sheet lined w parchment paper and bake them in a preheated oven at 180C until golden brown for 9-12 min
#3 Strawberry Ice Cream

1 can of coconut milk (400ml)
¼ tsp salt
a few droplets of vanilla aroma or ½ tsp vanilla
2 tbsp agave syrup or other liquid sweetener
1 tbsp cashew butter
⅓ cup frozen strawberries, more if desired (55g)

→ if needed add a couple tablespoons of non dairy milk as you're blending it the second time around, til you've got your desired consistency
→ serves 1-2
#4 Golden Champagne Cake

2 cups flour (240g)
2 tsp baking powder
⅓ tsp salt
¾ cup + 1 tbsp sugar (150g + 1 tbsp)

1 cup vegan yogurt or curd (250ml or 250g)
½ cup oil (125ml = 105g)
1 tsp apple cider vinegar
1 1/2 tsp vanilla
⅓ cup + 2 tbsp champagne or prosecco (100ml)
+ a couple more tbsp proseccoo to brush the cakes with

for the cream cheese frosting:

250g vegan butter at room temperature (1 cup + 1 tbsp)
300g vegan cream cheese at room temp (10,58 oz)
½ tsp vanilla
330g powdered sugar, added in 2-3 stages (2 cups + ⅔ cup) → I think flavour wise it tastes best with only 2 cups or 250g powdered sugar, but the cake will be easier to frost if you add another ⅔ cup or 80g, so I’d recommend to start with 2 cups and then decide if you wanna add more!

→ yields 1 cake made out of 2 8 inch, 20cm cake tins
