🇬🇧 Traditional British Blueberry Bakewell Cake Recipe: Fresh Blueberries Bursting in Almond Cake

Hi, I'm Cassandre, today we're going to share with you a classic old fashion dessert : British Blueberry Bakewell Cake.

Bakewell Cake is a classic pastry in the Bakewell region of England, and the history of this dessert has a lot of twists and turns. Because it was first called Bakewell pudding, then developed into a combination of tart crust, jam, frangipane, and a topping of flaked almonds, named Bakewell Tart. But in this video, we'd like to share its cake version which is considered an extension of the Bakewell Tart. It's more easy to make and very amazing delicious. You can taste lots of fresh blueberries in every bite, super suitable for home making, the whole process only requires a tub of mixing in the end, no extra crust, super easy. British Blueberry Bakewell Cake How do you make it?
Here is the recipe and recipe for British Blueberry Bakewell Cake:

☞ Baking mold size: 6-inch round mold (15cm in diameter, 6cm in height)

✎ Ingredients
unsalted butter 84g, softened at room temperature
brown sugar 84g
whole egg 68g, room temperature, beaten
almond flour 84g
cake flour 80g
baking powder 3g
rum 5g
fresh blueberries 150g, washed and dried
almond slices 17g
powdered sugar (for decoration)

✎ Directions
1. Using a movable bottom baking mold, spread a little softened butter on the bottom of the mold and line it with a baking paper.
2. Sift the flour and baking powder together and mix well after sifting, set aside
3. Sift the almond flour, set aside.
4. Beat the softened cream at room temperature for about two minutes on medium speed until fluffy and paled.
5. Add sugar and beat at medium speed for about two minutes to mix well.
6. Pour in the rum and mix until well blended.
7. Add the egg mixture in two batches, mixing well at medium speed each time.
8. Add the flour in 2-3 batches and mix at the lowest speed until no dry flour can be seen.
9. Add the almond flour and mix well at the lowest speed.
10. Spoon half of the batter into the baking mold, spread it flat, and then evenly top with fresh blueberries.
11. Cover the remaining batter with blueberries, smooth out, and sprinkle with almond slices.
12. Preheat oven to 180C and bake for 55 minutes or until the top is golden brown and not sticky when inserted with a bamboo stick.
13. Cool on a cooling rack for 15 minutes before remove from the pan, then cool thoroughly before wrapping in plastic wrap and refrigerating in an airtight container.
