soooooo much yummy food this weeks What I eat in a week as a vegan my friends!! hope you enjoy the video!
here's the recipe for the risotto;
Cheesey Vegan Risotto
1 1/2 cup Arborio rice
100g enoki mushroom
200g small white mushrooms - sliced
1 carrot - finely diced
1 brown onion - finely diced
6 cloves garlic - crushed/finely diced
80g baby spinach
3/4 cup nutritional yeast
1 1/3 litres vegetable stock - hot
Salt & pepper
3 tbsp olive oil
Bring a pot to medium heat with the olive oil then fry the onion for 3 - 4 minutes with a pinch of salt. Add the garlic, carrots and mushrooms and fry for another 3 - 4 minutes, stirring occasionally.
Add the rice to the pot and mix well to ensure all of the rice is covered in olive oil.
Begin adding 1 cup of stock at a time, when all the liquid is soaked up, add another cup and repeat until you are out of stock and the rice is well cooked. This will take around 20 - 30 minutes.
Once the rice is cooked add in the nutritional yeast and a decent pinch of pepper and stir well, turn off the heat then fold in the spinach, it will seem like a lot of spinach but it will reduce in size significantly.
Serve in a bowl with fresh parsley and enjoy!
