Super Tasty Vegetable Egg Fried Noodles | Simple Recipe

Home-style Fried Noodles with Vegetables & Eggs

Ingredients
2 blocks noodles (ramen or egg noodles)
1 bowl bean sprouts
½ carrot, julienned
⅓ onion, sliced
2 scallions
2 garlic cloves, minced
3 eggs
2 tbsp sesame oil
2 tbsp light soy sauce
½ tbsp dark soy sauce
1 tbsp oyster sauce
A little ground pepper
Chili oil (optional)

Instructions
Bring water to a boil. Cook noodles for 2–3 minutes until chewy.
Rinse noodles in room-temperature water for 30 seconds, then drain well.
In a bowl, toss noodles with sesame oil, light soy sauce, dark soy sauce, oyster sauce, black pepper, and chili oil (if using). Set aside.
Beat 3 eggs with a pinch of salt. Heat oil in a wok, scramble the eggs, then set aside.
In the same wok, sauté garlic and white parts of scallions until fragrant.
Add carrots and stir-fry for 2 minutes. Add bean sprouts and onion, stir-fry for 1 minute.
Drizzle in a little light soy sauce and stir-fry for 30 seconds.
Add noodles and eggs back to the wok. Toss everything together for 1 minute.
Top with green parts of scallions.
Serve warm and enjoy!
