Try these crispy, fluffy scallion pancakes—easy to make and full of flavor!

Ingredients:
Dough
300g all-purpose flour
3g salt
180ml warm water (around 50°C)

For the oil paste
15g flour
30ml hot cooking oil
1g salt and pepper powder
30g Scallion

Steps:
Mix flour, salt, and warm water with chopsticks until crumbly, then knead into a soft dough. Let it rest, covered, for 30 minutes.
Divide the dough into 6 pieces, roll each into a ball, and let them rest again.
Make the oil paste by combining flour, hot oil, and pepper powder.
Roll a dough ball into a thin circle. Spread the oil paste, sprinkle with scallions, cut a line down the center, then roll it up tightly from one end. Pinch the ends to seal. Flatten gently into a disc.
Let the disc rest for 10 minutes, then roll it out thinner.
Cook: No need to thaw if frozen. Pan-fry over medium-low heat, spraying oil on both sides. Flip when the pancake puffs up. Cook until golden and crispy.
These pancakes are perfectly layered and full of scallion flavor.
