WHAT I EAT IN A DAY - Vegan Weight Loss and Maintenance | Plant Based, Starch Solution Meals

Today I am sharing a day of eating as a vegan who is in weight loss mode or maintenance. I eat a vegan, whole food plant based diet with my meals centered around high starch and low fat, following the general ideas of Dr. John McDougall and his book, The Starch Solution. ✨ RECIPES IN VIDEO:
Smoothie Bowl - (1 serving)
1 Frozen Banana, big handful of spinach, 1 TBSP nut butter (I used peanut), plant milk ( I used almond). Blend together until thick, ice cream like consistency. Use a small amount of milk and add as needed.
Pasta Salad - (1 serving)
Whole wheat pasta (I use 1 cup), big handfuls of spinach, black olives, tomatoes, 1/2 - 1 cup white beans, Hungry Vegan Mama dressing (recipe above). Mix together and enjoy!
Pizza - (1-2 servings)
Engine 2 whole wheat pizza crust and sauce (link to the kit above)
Veggies

I love sharing these what I eat in a day videos with you because I feel like it gives you a better insight as to how someone who is on a vegan weight loss journey may eat to achieve their goals, or how someone maintaining their weight may eat.
Eating a whole food plant based diet is an amazing and healthy way to eat, and many people have great success losing any unwanted, unhealthy body fat eating this way. However, there are some who still struggle to do that, and one of those people was me. That's why I decided to follow the general guidelines of Dr. McDougall's The Starch Solution, which is a higher starch, high carb, low fat vegan plant based diet, allowing one to fill their stomach with food, less calories, and stay satisfied until their next meal.
