My Grocery List:
-5lbs white potatoes
-3lb Yukon potatoes
-carrots 1lb
-frozen broccoli
-pasta
- frozen mixed veggies
-grits
-corn tortillas
-black beans
-onions
-lettuce
-frozen green beans
-flour (all purpose)
-diced tomatoes (large can)
-tomato sauce (large can)
-yeast
Vegan Cheeze Sauce:
-3lb Yukon potatoes (scrubbed well but I leave the skin on)
-1 lb carrots (washed and peeled)
-6 cups of water
*Cook in your instant pot for 7 minutes
*Add carrots & potatoes to either a high speed blender or a food processor, add 3 cups of the starchy cooking water
*Add 1 tsp salt & 1/3 cup nutritional yeast
*Blend & Enjoy!
Homemade bread:
-3 cups flour (all purpose)
-1 tsp salt
-1/2 tsp yeast
-1 1/2 cups warm water
*Mix well, let sit at least 8 hours (I let mine sit overnight on my counter covered with a tea towel in a bowl)
*Pre heat oven to 450, add your bread pan to the oven while it pre heats
*Bake with a lid for 30 minutes, remove lid and bake for an additional 15 minutes
The meals I made this week: *42 Meals in total
Tomato Soup: *4 servings
-1 can petite diced tomatoes (I used the ones with Italian seasoning)
-1 can tomato sauce
-6 cups of water
*Bring to a simmer
*Add additional spices and seasonings if you'd like
Cheeze & Grits *14 servings
Breakfast Tacos *4 Servings
Potatoes W/ Cheeze & Broccoli *6 Servings
Nachos *4 servings
Mac N Cheeze *4 Servings
Pizza W/Cheeze Sauce & Onions *6 servings
*Pizza Dough:
-3 cups flour
-1 tsp salt
-1/4 tsp yeast
-1 1/2 cup warm water
*Mix all ingredients and let sit for at least 8 hours (unless you are using quick active yeast than 3 hours is fine)
Spilt into two even pizza crusts, roll out. Pre bake at 425 for 15 minutes. Add toppings and bake for an additional 12 minutes
