Healing Vegan Miso Soup | The Correct Way to Cook Miso Soup

Begin your day with a powerful bowl of warm miso soup!

Miso paste is made from fermented beans (usually soybeans), grains (rice or barley), salt and a fermentation starter called Koji. This fermented condiment is rich in live enzyme and beneficial microorganisms that aid digestion, battle inflammation, boost immunity as well as fight fatigue. The key to these amazing health benefits is that it must be allowed to ferment from 3 months to 3 years.

When purchasing miso paste, choose non-GMO, ideally organic soy beans for better health benefits. As miso paste is salty, it is advised to consume them in moderation.

Ingredients:
(Servings: 2)

1L dashi
3 TBSP miso paste
1/2 medium size onion, roughly chopped
1/2 large size carrot, half-moon sliced
1/3 large size daikon radish, half-moon sliced
1 - 2 stalks radish leaves, finely chopped
1/2 cup tofu, cubed
1 spring onion, finely chopped
