Bread Baking class Lesson 1 - How to make your own Sourdough

This is the first lesson of my German Bread Baking class.
In this session:
How to start your own sourdough.(Minute 4:00)
How to set up the oven (Minute 21:53)
And
How to bake some simple bread rolls.(Minute 6:00)

And here the Recipe for the
Sourdough
100 g of fine Rye flour
100 g of water

For the Rolls:
990 g all purpose flour (no self raising)
610 g water, cold
18 g instant yeast
18 g salt
if you like 10 g sugar of honey

Mix a dough out of the ingredients and mix it at medium speed for 10 minutes. Then leave it in the fridge over night or let it rest for at least 1 hour on a warm place.
Divide in equal size portions and form rolls out of it and let these rest for 45 minutes.
Preheat oven to 250 C (485 F)
Reduce heat when you put the rolls in to 200 C (392 F).
Bake for 15 to 20 minutes.

You can roll the buns in seeds (sesame, poppy seeds, flax, sunflower) before you let them rest.
