IMPORTANT INSTRUCTIONS

1. HOW TO BUY RAZOR CLAMS?
* Always buy FRESH razor clams! They should be alive, with a pleasant slight sea salt smell, the same smell as fresh seafood.
* The shell of the clams has to be closed, if not - tap them, they should move. In case they are not, then smoothly touch the clam on the opposite side of the head, if the muscle has contracted, the clam is alive.

2. HOW TO STORE RAZOR CLAMS?
As the clams must breathe to stay alive, keep in the fridge without soaking them into the water!
Follow these simple steps to store it properly:
* Prepare an ice cube pillow in a plastic ziplock, place them in a container.
* Gently distribute clams on top of the ziplock ice pillow and cover them with a layer of wet paper towels to keep them moist.
* You can keep them up to 2 or 3 days, though it's best to cook razors as soon as possible.

3. HOW TO CLEAN RAZOR CLAMS?
* Always check that the clams are closed, if not they should close if you tap them, otherwise throw those away.
* Prepare a container with cold salted water and soak the clams for about 20 minutes, they will expel the sand from their system.
* Rinse with tab running water and wash them additionally to remove sand if any
* Transfer the clams to a colander and drain the excess water.

INGREDIENTS:

0.7 kg - Atlantic razor clams
1/4 cup white wine
20 g. butter
2 tbsp vegetable oil
chili / to taste / minced
2 garlic cloves / minced
1 tsp ginger / minced
1/4 cup ciboulette / chopped
1/2 lemon juice
fresh mint / few leaves
kosher salt / to taste

Seafood is always great with garlicky and gingery flavors, so the amount of garlic and ginger is just perfect. A little bit more may OVERPOWER the natural sweetness of the razor clams meat!

PREPARATION

How to cook razor clams
1. Thinly Chop chili pepper, ciboulette, garlic, and ginger. Keep it aside.
2. Preheat a pan at medium-high heat and drizzle vegetable oil.
3. Add the garlic, ginger, chili, and saute until it is fragrant.
4. Add butter to melt and pour white wine. Let the wine evaporate for approx. 30 seconds.
5. Quickly place the clams in the hot pan taking care that they are facing up and in one layer👆🏻 Cover and let them steam for ONE MINUTE.
6. Uncover the lid and add the ciboulette, a few mint leaves, and drizzle with lemon juice.
7. Cover and cook for ONE MORE MINUTE.
Avoid overcooking as the clams become tough and rubbery!!!!!!
8. Serve immediately and spoon over the sauce on the clams.
