☑️HOW TO CHECK IF FISH IS FRESH

* Fresh fish should have a mild scent.
* The eyes should be bright and bulging, not sunken or cloudy.
* the gills should be bright red or pink and moist.
* fish's flesh should be firm and elastic.
* The skin should be moist and shiny.

Once you choose FRESH FISH you may ask your fishmonger to descale and take out the guts from the fish. IT WILL SAVE YOU TIME!

☑️HOW TO FILLET ANY FISH

Filleting a fish is easy to do, follow step-by-step actions.

* Start with a 45-degree cut behind the gills until you reach the backbone
* Make a cut along the back of the fish from the head to the tail
* Use the tip of the knife to separate the flesh from the bones
* Insert the knife just above the centerline of the back of the fish
* Run your knife through the fish all the way down to the tail and cut away the fillet
* Flip the fish over and start with the other side 
* Repeat a series of simple steps mentioned above in the correct order
* Carefully take out the rib bones from the fillet
* Make a cut between flash & skin in the opposite direction from the tail end
* Holding tight cut along the length of the fillet

Rinse the fillet with water & dry it with a paper towel.
Ready to cook the fillet

If you do not plan to eat the fillet within 1 day put it into a ziplock bag, and keep it in the freezer.

DO THIS👇, in case you bought FISH WITH SCALES:
To scale a fish but not mess up the kitchen is to submerge the whole fish underwater in your sink... then scale it. The water keeps the scales from flying. When done, you can drain the water from the sink leaving the strainer in place. Some clean-up is required... but not the whole kitchen.
